Roasted Garlic Mashed Potatoes

These mashed potatoes are so creamy!

These mashed potatoes only take a few ingredients and come together in just a few steps. They are a perfect side dish for a weeknight meal or perfect for the holidays. 

The vegan butter helps these taste like traditional and the roasted garlic brings them to the next level. Go ahead and give these a try at your next family get together!

Ingredients

2 pounds potatoes, peeled

1 head of garlic 

1 1/2 cups plant milk, heated

1/2 cup vegan butter, melted

Salt and pepper to taste

Olive oil 

Instructions

Cut top off head of garlic and drizzle with olive oil. Wrap in foil and bake at 400 for 45-60 minutes. 

While garlic is roasting peel and chop potatoes into large equal sized pieces. 

Boil potatoes in salted water until til fork tender. 

When potatoes are soft drain and mash using a potato masher or potato ricer. 

Squeeze the head of roasted garlic into mashed potatoes leaving the papery skin behind. 

Add heated plant milk, melted vegan butter and salt and pepper. 

Mix until incorporated. 

Notes: Add extra plant milk if potatoes are too dry. 

Notes: Any variety of potato will work for this recipe.
