This is perfect for thanksgiving!
Thanksgiving is quickly approaching and finding vegan friendly recipes can be difficult. If your family is anything like mine it can be especially difficult to find recipes that everyone will enjoy. This dressing is so similar to traditional cornbread dressing that no one would ever guess it was vegan.
Give this recipe a try this holiday season and show your family that vegan food can be just as good!
Time: 1.5 hours
Yield: 8×8 baking dish
Ingredients:
1 medium onion diced
2 celery ribs diced
2 cups vegetable stock
1/2 teaspoon ground sage
1 Tablespoon salt
1 teaspoon pepper
1/4 cup vegan butter
Instructions:
In a medium skillet melt vegan butter and add celery and onions.
Sauté until celery and onion has softened.
Add ground sage, salt and pepper. Mix thoroughly.
In a large mixing bowl crumble cornbread and add onion/ celery mixture and vegetable stock.
Mix thoroughly.
Place dressing mixture into a greased 8×8 baking dish.
Bake at 400 for 30-45 minutes until golden brown.
