This is one of the best recipes I have ever made!

When I first decided to make this I wanted to do a seasonal dessert. I was trying to come up with a fall themed dessert that wasn’t apple. I thought about pears and how I haven’t really seen anyone do a pear cobbler. 

I made this recipe and was so pleasantly surprised. I think it’s one of the best cobblers I have ever made. I used Red and Bosc pears in this recipe but you could also use Bartlett pears. The most important thing is that they are ripe and the flavor is developed. 

Time: 1 hour

Yeild: 2 quarts

Ingredients:

For Filling:

6 large ripe pears or 2.5 lbs

1 teaspoon cinnamon 

1 teaspoon ground ginger 

1 teaspoon vanilla 

2 tablespoons Ap flour

1/2 cup maple syrup

For Crust

1 cup Ap flour

1/4 cup coconut sugar

1/2 cup melted vegan butter 

1/2 cup plant milk

1/2 teaspoon baking powder 

Instructions:

Peel, core and dice pears. 

Add cinnamon, ginger, vanilla and flour to pears. Stir to combine. 

Add maple syrup and mix thoroughly 

Add to a greased baking dish. 

In a mixing bowl combine all the ingredients for the crust and mix thoroughly. 

Add the crust mixture on top of pears. 

Bake at 375 for 45 minutes or until golden brown. 

Notes: Use any variety of baking pears. 

Notes: Cornstarch could be substituted for flour in filling mixture.
