Chocolate Chip Walnut Oatmeal Cookies

These cookies are so good you wouldn’t guess they are vegan!

These cookies are so easy to make and come together with mostly pantry staples. When I was creating this recipe I wanted to make a recipe that could be made with ingredients I already had on hand!

The beauty of this recipe is that it could be customized with what ever flavors you would like. You could substitute the chocolate chips and walnuts for other ingredients and still have a great result! You have to give it a try and I think you will truly be surprised with how great they turn out.

Time: 30 minutes 

Yeild: 16 to 18 cookies

Ingredients:

1 cup flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup applesauce 

3/4 cup maple syrup 

2 teaspoons vanilla 

1 1/2 cups oats

1 cup chopped walnuts

1 cup chocolate chips (naturally sweetened) 

Instructions

Add applesauce, maple syrup, baking powder, baking soda, salt and vanilla to a mixing bowl. Stir to combine. 

Add flour to applesauce mixture and stir until fully mixed together. 

Add oats, walnuts and chocolate chips to mixture and stir to form a dough. 

Refrigerate for at least 1 hour or overnight. 

Take approximately 2 Tablespoons of dough and roll into balls. 

Place onto parchment lined baking sheet and gently press down. 

Bake at 350 for 12-15 minutes. 

Notes: Recipe could be made gluten free by using a gluten free flour. 

Notes: Honey or coconut sugar could be substituted for maple syrup.
