Sweet Potato Gnocchi

You have to give this a try!

I love gnocchi but sometimes it can be a little difficult to find a vegan store bought one. Even more difficult is finding a vegan sweet potato gnocchi!

This recipe comes together pretty easily and can be put together in a couple hours! Also it is great to make in bulk because you can freeze them and cook straight from frozen.

Pair this gnocchi with a vegan garlic butter sauce, or fresh herbs and you are in for a delicious meal!

Ingredients:

3 lbs sweet potatoes 

1 Tablespoon salt

Approx. 5 cups flour 

Instructions:

Poke sweet potatoes with a fork and roast in the skins at 400 for 1 hour

Cut sweet potatoes open and allow to cool completely 

Remove potatoes from skins and mash thoroughly or use a potato ricer

Add salt and stir

Slowly start adding flour and mixing, continue until it becomes difficult to mix. (You may need more or less flour depending on moisture in potatoes)

Turn mixture out onto floured work surface, kneed until mixture is no longer sticky and forms a smooth dough

Form into a ball and cut into quarters 

Roll each quarter out into a 1 inch thick strand. 

Cut into 1/2 inch pieces. ( It doesn’t have to be exact)

Optional: roll each piece into a ball and roll across a gnocchi board or the back of a fork to leave impression. 

Allow to dry for 30 minutes, cook in boiling water or freeze. 

Notes: Recipe could be made in a stand mixer with dough hook.
